Capocollo
Cured pork neck (coppa) whole (not ground), salt, spices and red-hot chili pepper (for the spicy style), packed in natural casing. Hand-tied with natural twine. The curing process is very slow, the flavour is mild and delicate thanks to the slight veins of fat.
